Medium pot and cover
Soup ladle
Kitchen knife
Can opener
Serving dish and utensil
Ingredients
Chicken stock
Rotisserie chicken
Can of red enchilada sauce
Can of fire roasted tomatoes, diced
Can of sweet corn
Salt and pepper to taste
(Optional: Heavy cream)
Directions
Cut meat off the bone from the rotisserie chicken and place in the pot
Add all other ingredients into the pot and bring to a boil.
Once boiling, lower to a simmer and allow to cook for 10 minutes.
Add heavy cream if a creamy soup is desired.
Salt and pepper to taste.
