Depending on which ingredients you choose to include, it will take more or less time to prepare. For this recipe, I included eggs, green pepper, onion, crispy bacon and tator tots.
Depending on what size tortillas you use, this recipe can yield different amounts. for easy meal prep, use small tortillas (you'll get about 8 burritos) and freeze the leftovers for later!
Large tortillas will give you a more traditional burrito size, and will yield about 2-3 servings.
If you don't have tortillas, the mixture also makes a great breakfast scramble!

Ingredients
- 5 eggs
- 1 green pepper
- 1/2 yellow onion
- 1 package flour tortillas, any size (I used small)
- fajita seasoning (optional)
- 5 strips bacon, cooked and chopped (optional)
- Tator tots (optional)
Directions
- Cook tator tots according to package directions or until crispy, set aside to cool. For this recipe, I used about 12 tots.
- While the tots are cooking, dice the green pepper and onion and set aside
- While the tots are still cooking, heat your frying pan to medium heat and fry up your bacon to be crispy and set aside to cool (to make this step easier, I took 5 full strips and cut them in half to be smaller).
- From your frying pan, remove excess bacon grease, but leave some in the pan - we will use the remains to fry up our green pepper and onion. If you don't typically reserve your excess grease, a trick I find useful is to place some tinfoil over the kitchen sink drain to catch the grease.
- Return the pan to stovetop and heat to medium-low. Fry up your green pepper and onion until soft enough to pierce with a fork, then transfer to the mixing bowl. For extra flavor, I seasoned my veggies with some fajita seasoning (about 1tbsp)
- Reheat pan over low heat and scramble your eggs until just cooked, then add to the mixing bowl.
- To the mixing bowl, also add in your tator tots and bacon, both crumbled up. Mix all ingredients together well.
- Using a regular spoon, place desired amount of filling onto tortillas one at a time and roll them up. (I used about 2-3 scoops of filling for each small sized tortilla I used)
- Serve while they're warm, or freeze them until you're ready to eat them. To reheat, cover with a damp paper towel to lock in moisture and place in the microwave for about 90 seconds (adjust for your microwave).
- For extra fun, serve with a side of salsa or sour cream!
