Open Face Cucumber Sandwiches

Time: 15 minutes

Appliances/Tools Needed

  • Mixing bowl/receptacle of some kind

  • Fork or spatula (something to mix with)

  • knife

  • vegetable peeler (optional)


Ingredients

  • 1-2 large cucumbers 

  • 8oz softened cream cheese

  • One packet dry italian dressing 

  • One package cocktail (mini) rye or pumpernickel bread (or a regular loaf cut into thin 2 inch squares).




Directions 
  1. In mixing bowl, use a fork or spatula combine cream cheese and and italian dressing packet to create a spread, set aside

  2. Cut cucumbers into slices about 1/4 inch thick (prior to this step, peel cucumber if desired using a peeler or knife)

  3. Distribute spread evenly over each slice of bread

  4. Place cucumber slices on top and enjoy

  5. You can also place the spread into a resealable container and use as desired rather than spreading all sandwiches at once.

  6. Spread will keep in fridge for about one week after making and can also be used as a dip!
